Deli Sandwich Keto Friendly Food Bowl

The truth is, I love sandwiches. Like, a lot. Especially if the contents are carefully curated inside a fresh French baguette. The bread truly is my favorite part. The bread also kills my tummy, for the next 5 days, minimum. Damn gluten intolerance has me over here in tears. Following a modified Keto Diet plan has truly been a lifesaver for me. I still get to enjoy gluten filled things on my carb cycling week. But the thing is, I’m super conscious of what I put into my mouth, along with how much of it I actually consume. So for that week (I’m not following the Keto carb cycling rules, I know) I allow myself healthy carbs and unhealthy carbs and love that week just as much as I love German Choclate Cake. Yum. I haven’t tried making a gluten free bread yet, but it’s on my master to do list. Especially because I need more options for Arlo, my five year old who is on the severe side of the autism spectrum. Gluten hurts his little belly too and as he grows, I’m coming to find he is most like me, with his digestive system. So for now, I put together sandwich insides in a fun, buffet style kind of a way. And really seeing a sandwich, laid out strategically in a bowl, is pretty awesome. And yummy. I actually don’t really miss the bread when I am over here devouring the food bowl. It’s THAT good, y’all.

This yummy food bowl is styled pretty, but as soon as this bowls professional food photo shoot was through, I ate my cheese sticks, sharing a half of one with Hunter, baby. Then I mixed all of the contents around, dumped my ranch dressing right on top and went to town. It was DELISH. I of course, sent my husband and dad one of the final edited photos and they sent me back drooling emoji faces. Yep. Success. And it’s keto-Approved. Yasssssss!

Before I share the contents of this delicious food bowl (to be eaten for lunch or dinner) with you, you may have noticed that blessed mug. Totally thrifted. And when I got it home, I laughed out loud. The letters are stickers! I thought, how absurd. And then I thought, how freaking brilliant as far as food styling and photography props go. In fact, I’ll be DIY’ing a lot of my own mugs here soon because WHY THE HELL NOT?! Yes, some will totally have potty mouth words included because, well, this mama has a potty mouth sometimes.

This is Keto Grade B (limit) meal. And it’s delish!

Ingredients

  • 3 Handfuls Artisan Lettuce
  • 3 Pieces Delifresh Honey Ham Lunchmeat
  • 3 Pieces Delifresh Turkey Lunchmeat
  • 2 Units Part Skim Mozzarella Cheese Sticks
  • 3 Slices Fresh Red Bell Pepper
  • 2 Whole Baby CarrotsSliced thin
  • 1/2 Roma Tomato
  • 1 Tbsp Pine Nuts
  • 2 Tbsp Ranch Dressing

Instructions

  1. Combine all your ingredients and devour. It’s as simple as that! 

    Note: to make this a Keto Grade: A meal, you can make your own oil based dressing. I’m lazy and just threw store-bought ranch dressing on mine!
