Chilled Coconut Mango Tropical Dessert
It’s surprisingly warm today; this Sunday of weird. I spent all morning deep cleaning my kitchen, the one that has only 3 useable square-sized countertops (the fourth square is covered in random stuff that I try to clean off, but somehow gets all cluttered again right away). The kitchen in my 1970’s box of a house is, well, awful. The room itself is pretty large, but the actual design is just ridiculous and not a great use of space AT all. I mean, the entire house has me scratching my head wondering what the architect was thinking. The entire bottom floor is literally a SQUARE. I wish I could say that I was simply updating my perfectly laid out mid century modern home, but that isn’t the case. I got myself a box to work with, instead. A complicated box.
Sorry I’m rant-rambling – something that comes easily to me as I dream of doing a full redesign of the space I call my kitchen. But my friend, don’t get me wrong as I am very thankful for my home. It’s a safe place that’s warm, cozy and full of love. One day, when I’m able, it will be my dream home. But until then, I may very well grumble to myself when I’m actually trying to create a bowl of delish in very little allotted work and prep space.
So why is this Sunday weird, you wonder? It’s December, in Ohio, and has been rainy and dark and so very bone-chilling cold. And then today we wake up and it’s sunny and 65 degrees Fahrenheit. Weird, but a happy surprise. I opened the windows, Freddie put up all the Christmas lights on the outside of our home. My older two kiddos played outside in tee shirts and shorts. And my two little boys had so much fun playing in the sunlight that was beaming from all our windows and sliding glass doors in the family room. It was gloriously weird.
I actually made three new recipes for this little food blog of mine, today. One dessert (this one), one smoothie and one dinner. My littles got to taste test them all and were gushing about how good they were. So I hope that you enjoy them, as well. Let’s get to this one, yes? I added something super special, to give it a slight little kick of spice. Ground ginger. The recipe below is for the base mixture only. On top, I added fresh pineapple, from the can variety, a sprinkle of cinnamon and some frozen blueberries…which kept this froyo style dessert chilled while we devoured it. Sure, this baby is under 100 calories, if you are a calorie counting kinda gal. Me? I pay more attention to the carbs and the sugar…and this one totally doesn’t fit into my modified Keto Diet plan. Ah well, it was worth it. As I took my first bite, I dreamed of being on a sugar sand beach, dipping my toes into the deep blue, salty ocean…and drifting into the sweetest reverie.
Chilled Coconut Mango Tropical Smoothie
A chilled dessert that will have you dreaming of sugar sand and the deep blue ocean
- .5 Cup Organic Lite Coconut Milk
- 1 Small Banana (Frozen)
- 1 Cup Mango Chunks (Frozen)
- .5 Tsp Xanthan Gum (Thickening Agent)
- 1 Tbsp Ginger (Ground)
Place all the ingredients into your blender of choice and pulse until smooth. Serve immediately or place in freezer for 10 minutes, for a “frozen yogurt” type of a texture.
